6 Mrs Rich's® Macadamia Nut Delight Cookies
280g Granulated white sugar
70g Unsalted butter
180ml Versatié®
2.5g Salt
6 Granny Smith apples, peeled & cubed
5ml Lemon juice
7g Ground cinnamon
  1. Defrost cookies until soft, place them into a greased muffin tin and bake at 150⁰C for 12-15 minutes
  2. Once baked make an indent with a teaspoon to create a cavity for the pie filling.
  3. For the caramel
  4. Warm the Versatié® in a saucepan and set aside.
  5. In a pot, melt 200g of sugar over medium heat, occasionally stirring until melted and amber in colour.
  6. Add the warm Versatie® into the caramelized sugar.
  7. Once well combined, add the butter and salt, stir toughly.
  8. For the filling
  9. Place the cubed apples into a pan with 80g of sugar, lemon juice and cinnamon.
  10. Cook until slightly softened and most of the liquid has evaporated.
  11. Allow the cooked apples to cool.
  12. Fold in the caramel sauce.
  13. Assembly
  14. Fill each cookie cup with the apple filling and serve.
